INGREDIENTS:

  • 6 cups Arugula leaves
  • ¼ cup dried currants or cranberries
  • ¼ cup pine nuts or slivered almonds
  • ¼ cup sliced red onion

DRESSING:

  • 1 tbsp raw honey
  • 3 tbsp balsamic vinegar
  • 2 tbsp almond butter
  • 1 garlic clove
  • 1 ¼ tsp coconut aminos (or gluten free tamari or Braggs Liquid Aminos)
  • ¼ cup avocado

PREPARATION:

  1. Blend all dressing ingredients together.
  2. Pour over greens and toss.
  3. Top with cranberries and pine nuts.
