(SERVES: 4-6)

INGREDIENTS:

  • 2 cups cooked beets
  • 2 garlic cloves
  • 2 tbsp tahini
  • 1 tbsp Apple cider vinegar
  • 1 teaspoon cumin
  • ¼ tsp ground coriander
  • 1 tbsp honey
  • ¼ tsp salt
  • 1/8 tsp fine ground pepper

PREPARATION:

  1. Chop the cooked beets and place them into the food processor along with all the other ingredients.
  2. Taste to check seasonings.
  3. Garnish with a little extra yogurt and some parsley or mint on top.
  4. Serve with vegan yogurt and chopped parsley, pita crackers or veggies.
