(SERVES: 2-4)

INGREDIENTS:

  • 2 cups blueberries
  • 2 cups cubed jicama
  • 2 cups cubed watermelon
  • 1 cup chopped peaches
  • ¼ cup chopped fresh mint
  • Juice of 1 lime
  • 1 tsp lime zest

PREPARATION:

  1. Place all chopped fruit into a large bowl and toss in lime, zest and mint (add a pinch of salt-optional).
  2. Serve as a side, dessert, or breakfast.
