Arugula Salad with Balsamic Dressing
(SERVES: 4)
INGREDIENTS:
- 6 cups Arugula leaves
- ¼ cup dried currants or cranberries
- ¼ cup pine nuts or slivered almonds
- ¼ cup sliced red onion
DRESSING:
- 1 tbsp raw honey
- 3 tbsp balsamic vinegar
- 2 tbsp almond butter
- 1 garlic clove
- 1 ¼ tsp coconut aminos (or gluten free tamari or Braggs Liquid Aminos)
- ¼ cup avocado
PREPARATION:
- Blend all dressing ingredients together.
- Pour over greens and toss.
- Top with cranberries and pine nuts.
